Pumpkin Cake

From the kitchens of the Walt Disney World Swan and Dolphin Hotel Oct. 2003

2/3 Cups Butter
1½ Cups Light Brown Sugar
2 Large Eggs
2 Tsp. Vanilla Extract
2 Cup Canned Pumpkin
3 Cups All Purpose Flour
1½ Tsp. Baking Powder
1 Tsp. Baking Soda
½ Tsp. Salt
1½ Tsp. Cinnamon
¾ Tsp. Ginger
½ Tsp. All spice
½ Tsp. Mace
1/8 Tsp. Cloves
1 Cup Milk
1/3 Cup Sour Cream

  1. Preheat oven to 350°.
  2. Using a mixer with the paddle attachment, cream butter in a mixing bowl until soft.
  3. Add the brown sugar and mix until light and fluffy.
  4. Add the eggs one at a time scraping the bowl after each addition.
  5. Add vanilla and pumpkin. Add flour and spices in three additions alternating with the milk.
  6. Stir in the sour cream. Bake in kougloff pan for 1½ hrs.

Disney Halloween Treats!
I Love Disney Dolls
Cinderella’s Pumpkin Soup
(6 servings)
1 quart - Rich milk or milk and part heavy cream
1 medium sized onion sliced
4 whole cloves
4 sprigs of parsley (bruised by pressing with the back of a spoon)
1 clove garlic, pressed
1/4 of a whole nutmeg, grated
1 tablespoon chicken stock concentrate
(or 3 chicken bouillon cubes)
1 bay leaf
2 cups canned pumpkin
1 teaspoon salt
Freshly ground pepper to taste
1 tablespoon lemon juice
Minced parsley
6 teaspoons butter
Scale the milk with the onion, cloves, parsley, garlic, nutmeg, bayleaf, and chicken stock concentrate.
Add the pumpkin, salt and pepper.
Cook over hot water for 15 minutes; (use double boiler or similarpot)  pour through wire strainer and add lemon juice to the soup.
Serve with a sprinkle of minced parsley and about 1 tsp butter ontop of each bowlful.
(Remember this is a squash so butter enhances it but you could alsouse a dollop of sour cream on top too.)

Dopey’s Apple Upside Down Pie
1 cup walnut halves
1/2 cup brown sugar (firmly packed)
2    unbaked pie crusts (homemade or store bought)
5 medium apples, peeled and sliced
1/2 cup of sugar
1/3 cup melted butter
1 tsp. cinnamon
2 tbsp. flour
1/8 tsp. nutmeg
Mix the walnut halves, brown sugar and melted butter together andset aside.
Spray a deep 9-inch pie plate with a “no stick” cooking spray and pour the nut mixture into the pie pan.
Lay the first pie crust over the mixture and set aside.
Make the filling of the apples, sugar, cinnamon, flour and nutmega nd pour it on top of the pie crust.
Lay the second pie crust on top of the apple filling and crimp the edges of the crust.
Cut slits in the top of the crust and sprinkle with sugar. Bake 45 minutes in a 375 oven on a drip tray. Let cool for 15 minutes on a cooling rack. Loosen edges with a table knife and invert onto a serving plate.
